You cannot switch between the two after a document is created.

It depends on the document type. Documents export to PDF, DOCX (Microsoft Word), LaTeX source (.tex), and Markdown. The LaTeX Workspace exports to PDF only, just like Overleaf. All formats are available on all plans, including Free.
